Let’s just say that I’ll never turn away a cheesecake. I love cheesecake so much that there are times when I prefer it over cookies, cakes, pies, or other sweet and delicious dessert options.

And even though I’m an adult, I’ll forever be a fan of unicorns. Not only are they mythical and magical but they just remind me of all things rainbow and colors! Need proof that I love unicorns? Can you use a homemade cheesecake recipe instead?

Of course. I love this recipe because it’s a way for me to be creative when I’m short on time. But if you have a cheesecake recipe that you love or one that you’re dying to try, use that, too! What would be fun ideas for serving this cheesecake on a stick?

I think that this recipe is great for birthday parties, gatherings, weekend treats, and more. Everyone loves to eat food off of a stick, right? If you’re looking for a sweet that has everyone holding onto it on their own, this is a great and delicious option to have! 

This makes a great dessert for the kids to have a hands-on treat that they’re going to love and enjoy. 

How To Make a Unicorn Cheesecake

Ingredients needed for your unicorn-themed cheesecake

  • 1 Small Cheesecake, defrosted if necessary
  • 1 cup White Chocolate Candy Melts (or white chocolate chips, if desired)
  • 2 Tablespoons Unicorn Sprinkles
  • 6 Popsicles Sticks
 
Note: if the candy melts are not coating the cheesecakes evenly, you can stir in 1-2 teaspoons coconut oil or shortening to loosen it up.
 

How To Decorate a Unicorn Cheesecake

Place the cheesecake on a cutting board and cut into 6 even slices.
Insert a popsicle stick into each slice from the wide end through the middle of the cheesecake, as far into the cheesecake as you can while ensuring it doesn’t poke through the other side.
In a small microwave-safe bowl, melt the candy melts for 20 seconds. Stir and reheat as needed. Add coconut oil or shortening if the candy melts are not as smooth as you’d like after melting.
 
Holding one cheesecake stick over the bowl of candy melts, use a spoon to smooth 2 Tablespoons of candy melts all over the cheesecake. We chose to leave the wide end bare, but you can cover up that side, too.
 
Place the cheesecake on a plate, cookie sheet or even back on the cutting board and garnish with sprinkles.
 
Repeat with all cheesecake slices.
Allow the candy melts to set for about 1 hour before serving.
