I love Banana nut bread. It’s one of my favorite bread recipes around. Ironically enough Banana bread is one of the most googled recipes out there. Because of it’s interesting history it’s no surprise. It’s truly one of my favorite comfort foods. I also love make ahead recipes because who has time to put intricate meals together. That’s why I love this recipe for overnight french toast. It’s got the hearty texture of a bagel with the sweet taste of banana nut bread. This is the perfect recipe for brunch or weekend breakfast. You can even make this ahead of time to make for the kids to have before school.
It really is incredibly versatile. If you’re in the mood for a delicious french toast casserole than this is the perfect one. You can even substitute the milk with almond milk like my friend Lindsey did with her Almond milk French toast.
This casserole is perfect for holiday brunch accompanied by some delicious mimosas. However you decide to serve will be perfection because this recipe is perfection.

What you’ll need to make Overnight Banana Nut Bagel French toast casserole
4 regular-sized bagels, cut into chunks
8 eggs
3 cups milk
⅛ teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 very ripe bananas, mashed
½ cup coarsely chopped walnuts
Prepare a 9×13 casserole dish with nonstick cooking spray.
Place bagels in an even layer across the bottom of the casserole dish.
In a mixing bowl, beat the eggs, milk, salt, vanilla, and bananas until well blended.
Pour the egg mixture over the top of the bagel pieces.
Cover the casserole dish and refrigerate overnight (or for at least 2 hours.)
When ready to cook, remove the casserole from the refrigerator and allow it to rest on the stove top as the oven preheats to 350 degrees.
Bake for 45 to 55 minutes or until a knife inserted in the center returns clean.
Allow to rest for 10 minutes prior to serving
