Fast & Easy Pizza Pasta Salad : The perfect Summer Salad Recipe
Piazza Pasta Salad is one of my favorite dishes out there. It’s one I break out constantly during the Summer months. It’s also a must have at most of my family gatherings and birthday parties. You can serve it by itself as the main meal or as a side to a BBQ party. Pair it with a tasty Coconut Rum Punch and you’re ready to party! It’s simplicity is mind blowing and the flavors are fantastic.
I don’t think I’ve ever served it at an event where people haven’t asked me for the recipe.
So here it is. I’m putting ” Pen to paper” and posting it not only for myself but for others.
The original recipe was taken from a Rachel Ray Cookbook back when my oldest was born. It was a simple meal I would make when I didn’t feel like cooking, overwhelmed with a newborn. But needed to eat. It became a giant hit for even my picky husband. Now it’s become a staple in our home along with my Easy red potato salad.
Come over for a BBQ and you’ll see these two salads served at any of my events. Make this a fun even and add some Delicious Lobster Rolls or caramel apple bites.
I’ve altered a few things in this recipe out of simplicity for myself although the end product is still magical.
Her original recipe calls for wagon wheel pasta but honestly, any pasta such as bow tie, ziti or spiral will do. I’ve literally used any I’ve had on hand.
She also asks for plum tomatoes we enjoy cherry better so I added those as well but you can literally use any tomatoes you have on hand as well.
This recipe is SO forgiving. Best of all it tastes delicious just made or the next day for lunch. Sometimes when I need it for a potluck I will double the batch and save some for lunch that week. It’s even a delicious kids lunch.
The hard work with this recipe in essence is just chopping up all the ingredients…yes that’s the hardest part.lol Once you’ve got that done it’s all a mixing game.

What you’ll Need to make Pizza Pasta Salad
Cherry Tomatoes or any tomato you have on hand (I’ve used them all for this salad)
1/2 medium red onion, chopped
Pint of sliced white button mushrooms
1 small green bell pepper, seeded and chopped
1 Bag of pepperonis sliced
2 Cups of cubed or Shredded Mozzarella cheese
20 leaves fresh basil, torn or thinly sliced
1 pound of bowtie pasta , cooked to al dente and cooled under cold water, then drained
Dressing:
1 teaspoon garlic salt
1 teaspoon Italian dried seasoning
2 rounded tablespoon tomato paste
4 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil
Freshly ground black pepper
I hate chopping,so like I said before that’s the hardest part :D. But all you have to do is chop and mix all the ingredients together
Into the Pasta I suggest using fresh when called for (like with the basil)
and combine add the dressing and mix well.
Doesn’t this look Amazing? Yes, it’s as delicious as it looks, and even easier to make.
Eat it alone with a glass of wine, or carbonated water or serve it as part of a brunch, lunch or BBQ spread. I served this along side of sandwiches at my girl’s birthday party but honestly it could be eaten all by Itself.
So head to the store and grab the ingredients and enjoy this delicious dish for yourself.
Tips for making the Pizza Pasta Salad
Can I make it ahead of time? You sure can! It will taste good even if you make it ahead of time. When you first make it and the pasta is at room temperature/warm you will get more of that pizza flavor but it’s still delicious if you make it ahead of time and eat it then.
You can substitute most of the ingredients including the peppers, pasta, mushrooms and tomatoes. You can also remove items you don’t like, such as mushrooms. I also have been known to use other kinds of pasta including but not limited to rotini, ditalini and ziti to name a few. The only one I haven’t tried it with is one of the longer noodles like spaghetti or fettuccine.
Whatever you decide when you’re done making it just store it in an airtight container and serve when ready.

Ingredients
- Cherry Tomatoes or any tomato you have on hand
- 1/2 medium red onion, chopped

- 1 Bag of pepperonis sliced
- 2 Cups of cubed or Shredded Mozzarella cheese

Instructions
- Mix the cherry tomatoes, red onion, white button mushrooms, green bell pepper, sliced Pepperoni Mozzarella cheese, basil and pasta .
- In a separate bowl or salad dressing dish mix the garlic salt, Italian dried seasoning, tomato paste, red wine vinegar extra-virgin olive oil & black pepper
Notes
Can substitute pasta with another small type (Ie rotini, penne,etc.)
Can also use other kinds of tomatoes.
