What you need to make Taco Stuffed Peppers
Makes 24 stuffed peppers
Prep time: 20 minutes
Cook time: 10 minutes
12 mini bell peppers
1 pound ground beef
(one) 1 small onion, finely chopped
1 packet of taco seasoning
1 10-ounce can of diced tomatoes with green chilies
1/3 cup water
4 ounces cream cheese, cubed
1 can refried beans, heated
2 cups shredded Mexican blend cheese
How to make Taco Stuffed Peppers
Preheat oven to 400 degrees.
Brown the ground beef with the onion.
When the meat is cooked through, add the taco seasoning, tomatoes, and water. Stir to mix. Allow the ingredients to simmer for 5 to 10 minutes until the liquid has reduced.
Add the cream cheese to the pan and stir to mix.
Slice each pepper in half and remove the seeds.
Spread the refried beans along the bottom of each pepper.
Fill the pepper with the ground beef mixture.
Top with shredded cheese.
Place the peppers on a parchment paper lined baking sheet and bake for 15 minutes, until the peppers are beginning to soften and the cheese is melted.
