In fact, dare I say that these pumpkin cookies are my favorite type of cookies? They’re soft and chewy and loaded with a super creamy and delicious middle. I like to think of them like pumpkin whoopie pies, but you can literally call them whatever you want!
All I know is that my kids CRAVE them and ask for them once the fall season arrives. (and sometimes even before that!)

Pumpkin Cake Mix Cookies
Makes 18 sandwich cookies
Prep time: 10 minutes
Cook time: 15 minutes
Ingredients:
1 8 ounce package cream cheese, softened
1/2 cup butter, softened
1/2 cup pumpkin puree
1 box yellow cake mix
1 tablespoon pumpkin pie spice
For the Frosting:
1 jar cream cheese frosting
2 teaspoons pumpkin spice
Instructions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Beat together the cream cheese, butter, and pumpkin until smooth.
Add the cake mix and pumpkin spice and beat until a thick dough forms.
Use a tablespoon to form the dough into balls. Place the dough on the prepared baking sheet.
Bake for 13 to 15 minutes, until the edges are golden brown.
Allow the cookies to cool on the pan for five minutes, then transfer to a wire cooling rack to cool completely.
To prepare the icing, beat the cream cheese frosting and pumpkin spice together until well combined.
When the cookies are cooled completely, pipe the icing on the bottom of one cookie and place a second cookie on top to form a sandwich.
Can I freeze these cake mix cookies?
You can freeze them once they’re baked, but make sure to let them cool down all the way. Don’t add any frosting to them until you unthaw them and are ready to eat them. You can then make the frosting fresh to add to the middle of the cookies.
How do I thicken the frosting?
If the frosting isn’t as thick as you’d like, you can easily thicken it up by adding a little bit of powdered sugar to the mixture.
If it’s too thick, you can thin it out with some milk. Just pour it in slowly and stir and then see what you think of the texture. You can always thin it more later if you need, so don’t pour in a ton in the beginning.
