Who doesn’t remember as a kid eating delicious fruity pebbles cereal? This along with cocoa pebbles was always my favorite cereal as a kid. It was the 80’s so sugar wasn’t a no-no. That being said as an adult I’ve always enjoyed cereal. There’s something comforting and wonderful about eating delicious cereal for breakfast, lunch, or dinner. That’s why I came up with this fun dessert idea. I knew that I need a dessert that is both delicious and the perfect no bake cheesecake for any occasion!
That’s why I came up with this No Bake Fruity pebbles cheesecake! Using cereal in my dessert recipes has become a favorite thing to do! You can see how I’ve done this with my Trix Cereal Cheesecake and my Chex cereal bars.
This no bake dessert is no exception! It consists of a crunchy crust that’s so delicious and is filled with a cheesecake mixture that’s easy to make and out of this world. Makes 1 9-inch cheesecake
Prep time: 30 minutes
Chill time: 4 hours
What you’ll need to make a Fruity Pebbles Cheesecake
5 cup of whole Fruity Pebbles, plus more for topping
½ cup unsalted butter, melted
2 8 ounce packages of softened cream cheese
1 cup sugar
Juice and zest from one lemon
1 8 ounce package cool whip
How to make Fruity pebble cheesecake
First, Stir together the Fruity Pebbles and melted butter in a mixing bowl.
Spread the mixture into a greased springform pan, then press the cereal to the bottom of the spring-form pan and halfway up the sides of the pan.
Freeze for 15 minutes, until the crust is solid.
Next, while the crust is freezing, prepare the cheesecake filling. In a large bowl using a hand mixer together with the cream cheese, sugar, lemon juice, and lemon zest until smooth and combined
Fold in the Cool Whip.
Spread the cream cheese mixture over the top of the fruity pebble crust mixture and chill for at least 4 hours.
Finish it up with a sprinkling of fruity pebbles over the top of the cheesecake, then slice and serve.
