Twice-Baked Potatoes: The Perfect Side Dish
I think it’s safe to say that potatoes are amazing. I love how they can be fried (hello, french fries!), baked, boiled, mashed, smashed, and just about anything else you can think of AND still taste amazing. So good in fact, that dare I say that they might be one of my favorite food items to cook up?
Once you make up this simple potatoes recipe, I think you’re going to agree. Not only is it LOADED down with flavor and taste but it really could be a whole meal in itself. So much cheese. So much bacon….and this recipe makes so much to share! (or to enjoy on your own – totally up to you)
I’ve made this potato side dish for the family for a weekend recipe or as a fun holiday dish, too. It’s also a great way to accompany a main dish like this cracker crusted chicken. I have no shame in admitting that I’ve eaten this cold as leftovers and it’s just that cold.

What you’ll need to make Twice-Baked Potatoes
- 6 medium-sized Potatoes, scrubbed well
- 3 Tablespoons Vegetable Oil
- 1/2 cup Sour Cream
- 2 Green Onions, green parts chopped
- 1/2 cup butter
- 2 cups Cheddar Cheese
- 1/2 cup Milk
- Salt and Pepper, to taste
- 1/2 cup Chopped, Cooked Bacon (approximately 4 slices)
How to Make Potatoes with Cheese and Bacon
Scrub each potato clean and then rub with cooking oil.
Place the potatoes on the lined cookie sheet and bake for 1 hour.
Chop the potatoes into 1″ pieces and place them in a large bowl.
How to store leftover potatoes
As long as you store this simple potato recipe in the fridge and keep it covered, you can easily enjoy it for a few days without worry. Once you’re ready to eat it again, just pop it in the microwave for a short amount of time to reheat. (and if you’re like me, you can throw on an extra handful of shredded cheese at that point in time as well to make it even more cheesy and delicious!)
