I’m a big fan of cookies and an even bigger fan of cookies that have the perfect crunchy texture with flavor. While I’ve eaten my share of cookies in the day, the addition of the Rice Krispie treats will give each bite a crunchy texture that will have you coming back for more. We know how versatile chocolate chips are so naturally combining these with rice krispies was the perfect symphony of flavors!
The kids think it’s super cool that they get to eat cookies AND cereal at the same time, and I have to admit that I agree! Why limit the ingredients in your cookies when they can easily add in so much flavor and taste?!

Ingredients you need to make Rice Krispie Cookies with Chocolate Chips
1 teaspoon Baking Soda
2 teaspoons Cornstarch, less if you want a less fluffy cookie
3/4 cup Brown Sugar
1/2 cup White Sugar
2 Eggs
1 teaspoon Vanilla Extract
1 cup Rice Krispie Cereal
1 cup Mini Chocolate Chips, to taste
How To Make Rice Krispie Cookies with Chocolate Chips
Beat in the eggs and vanilla until just incorporated.
Bake for 8-10 minutes, until lightly golden, avoiding burning the marshmallows.
Makes 40 cookies.
How to store leftover cookies
Since this cookie recipe makes 40 cookies, you might find that you have a few leftovers. The best thing to do to keep cookies fresh is to store them in an airtight container at all times. This will keep them soft and ready to grab at any point in time.
How do you know when cookies are done baking?
