Lemon Cookie Bars
Makes 15 bars

Cook time: 25 minutes
Ingredients:
- 1 cup butter, softened
- 1 1/2 cups sugar
- 1 egg
- 3 tablespoons fresh lemon juice
- 1 teaspoon lemon extract
- Zest of one lemon
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
For the Glaze (optional):
- 1 cup powdered sugar
- 1 to 2 tablespoons lemon juice
How to Make Lemon Dessert Bars
Preheat the oven to 350 degrees and grease a 9×13 baking pan with nonstick cooking spray.
Beat together the butter and sugar until light and fluffy.
Add the egg, lemon juice, lemon extract, and lemon zest. Beat to combine.
Add the flour, baking soda, baking powder, and salt. Beat to mix.
Press the dough into the prepared baking dish and bake for 20 to 25 minutes.
Allow the cookie bars to cool completely, then cut them into squares.
Whisk together the powdered sugar and lemon juice until smooth. Dip the cookie bars into the glaze.
Allow the glaze to set before serving.
How do I store leftover dessert bars?
While it might be hard to believe that there will be leftovers, you need to be prepared when there are! Once the lemon bars cool down all the way, add them to an airtight container and store them in the fridge.
Keeping them cool will be the best way to extend their shelf-life and make them enjoyable for days to come. If you don’t want to eat them chilled, just let them set at room temperature for a short amount of time.
Can I skip the glaze?
You can. If you don’t want to add the glaze, don’t add the glaze! You can easily just add a little bit of powdered sugar on top instead and enjoy every bite.

Can I use bottled lemon juice?
You can, but fresh lemon juice really does add so much more flavor! If you want to take the flavor over the top, using fresh lemon juice is the best option to have and use.
