No Bake Lemon Pudding Pie Recipe

Summer is right around the corner and nothing says summer more than Lemon desserts. Growing up in Florida Lemons were a staple in my diet because of how readily they were available. We had a wonderful lemon tree that gave lots of gorgeous lemons.  Sadly we lost our favorite one during one of the hurricanes and never really got a good replacement. Thankfully, this recipe doesn’t require you to have a lemon tree on hand but it will still give you some delicious summer ready flavors everyone will love.

What you’ll need to make a Lemon Pudding Pie

For the Crust:

2 C crushed graham crackers

¼ C sugar 

¼ C unsalted sweet cream butter, melted 

1 – 9in round pie pan 

Lemon Pudding Filling Ingredients

2 boxes lemon pudding mix 

2 C whole milk 

1 large lemon zested 

2 tbsp lemon juice, fresh squeezed 

2 1/4 C heavy whipping cream 

3/4 C powdered sugar 

Lemon slices for garnish

1 medium piping bag with star tip

 

How to make Lemon Pudding Pie

 

Combine all ingredients of the pie crust

 

and press the crust into the pie shell 

Place into the freezer while you make the filling.

How to make Filling for  No Bake Lemon Pudding Pie

Using a large bowl, whisk together the lemon pudding mix and the 2 C whole milk 

Whisk in the lemon juice and lemon zest 

Place into the fridge while you make the whipped cream

Using a large cold bowl, pour the heavy whipping cream and powdered sugar into the bowl

Using a hand mixer, beat until stiff peaks form

Scoop 1 C of whipped cream into the piping bag and set aside

Remove the crust from the freezer and the pudding from the fridge 

Scoop 1 C of lemon pudding into the crust and spread evenly 

Using remaining whipped cream, gently fold the whipped cream into the remaining lemon pudding until mixed together.

Spoon and spread evenly the mixture into the pie crust 

Using the piping bag, pipe dollops of whipped cream onto the top of the pie 

 

Top with lemon slices 

Place into the fridge until ready to serve with a cold glass of lemonade like this Cherry lemonade
