Peeps cupcakes for the win! This simple cupcake recipe is made from a cake mix and topped with fluffy and delicious marshmallow peeps! Fast, easy, and tasty Easter fun!
Peep Cupcakes
Peeps are controversial you either love them or hate them, just like candy corn. Peeps are candy with a rich history. But one thing is for sure anything with peeps candy on top is the best? Not only does it add a fun flavor and texture but it just looks so festive and fun as well!
During the Easter season, I love looking at all the different types of peeps candy and options and then finding out ways to incorporate them into desserts. These cupcakes were a simple treat and the kids LOVED the outcome!
Next time we may try to add a different flavor of peeps to our radar to change up the flavor of the cupcakes. What a fun way to change things up with minimal time and effort!
It’s also super fun to match the icing to the color of the peeps – or not! Whatever you want your cupcakes to look like is totally up to you! Have fun making these cute Easter cupcakes!
Makes 24 cupcakes
Prep time: 20 minutes
Cook time: 30 minutes
Ingredients:
1 box white cake mix (plus ingredients to prepare)
½ package (3 ounce) strawberry Jello
½ package (3 ounce) berry blue Jello
For the icing:
1 cup butter, softened
1 teaspoon vanilla extract
6 cups powdered sugar
2-3 tablespoons milk
Pink food coloring
Blue food coloring
Pink and blue bunny Peeps
Instructions:
Preheat the oven to 350 degrees and line a cupcake pan with liners.
Prepare the white cake mix according to the package instructions.
Separate the batter into two bowls. Add the strawberry Jello to one bowl and the berry blue Jello to the second bowl.
Stir to mix until the Jello is fully incorporated into the batter.
Fill each cupcake liner around 2/3 full of the cake batter and bake according to the package instructions.
Allow the cupcakes to cool completely, then prepare the icing by beating together the butter and vanilla until smooth and well combined.
Add one cup of powdered sugar and one tablespoon of milk and beat until smooth.
Add two more cups of powdered sugar and one tablespoon of milk and beat. Then, add the remaining powdered sugar and beat to combine. If the icing is too thick, add more milk as needed.
Separate the icing into two bowls. Add the pink food coloring to one bowl and the blue food coloring to the other bowl. Stir until the colors are fully mixed.
Pipe the pink icing on top of the strawberry cupcakes and the blue icing on top of the blue cupcakes.
Place a pink bunny marshmallow on top of the pink cupcakes and a blue bunny on top of the blue cupcakes.
To keep the cupcakes as fresh as possible, store them in an airtight container until you’re ready to enjoy them!
