Copycat Star Crunch Cookies Recipe

We are huge fans of Star Crunch cookies in our home. My kids love these and I’m not going to lie, so do I. That being said it seems they’ve become harder to find lately and you don’t see them that much in stores anymore. That coupled with the fact that I like to pick out the ingredients that go in my kid’s foods I knew I needed to find the perfect way to replicate these delicious treats! That’s why I have this yummy treat that’s sure to be a hit for everyone

Makes 15 cookies

Cook time: 10 minutes

Chill time: 1 hour

What you need to make Copycat Star Crunch Cookies

1/2 cup unsalted butter

1 cup heavy whipping cream

one (1) of cup caramel bits

1 cup semi-sweet chocolate chips

1 10-ounce package of mini marshmallows

1/2 teaspoon salt

6 cups crispy rice cereal

How to make Copycat Star Crunch Cookies

Heat the butter in a large stock pot over medium-low heat.

When the butter is melted, add the heavy cream, caramel, and chocolate chips. Continue cooking over medium heat until the caramel and chocolate are melted, stirring often.

Add the marshmallows and salt, and stir until melted, then remove the pan from heat.

Stir in the crispy rice cereal until well mixed.

Use 1/4 cup to scoop out the mixture and pour the mixture onto a parchment paper-lined baking sheet. Lightly press the top of the cookies down to flatten.

Transfer the pan to the refrigerator to cool and set for around one hour before serving.
