Everyone will love starting off the day with these Cadbury Mini Eggs Cereal Bars! They’re the perfect sweet treat topped with chocolate and a nice crunch! Give the kids what they want for breakfast – candy-coated goodness!
Cadbury Mini Eggs Cereal Bars
Now, here me out. I’m not a fan of eating sweets and treats for breakfast. But sometimes, you just have to. And one of those times that you have to, is during the Easter months.
What I love about making this simple cereal bar recipe is that they make 15 yummy bars. They don’t need any “real” cooking and they store easily for a replay of breakfast the next day or a fast snack.
Since the main ingredients needed are Chex mix and marshmallows, the consistency and taste are going to be a winning choice for everyone involved.
Once these easy breakfast bars are made, the kids grant me the “coolest mom” award of the day. And can you blame them? Giving them candy for breakfast is like a dream come true for them! (Which is why this is a special treat!)
Makes 15 bars
Prep time: 15 minutes
Cooling time: 1 hour
What you need to make Cadbury Mini Eggs Cereal Bars
¼ cup butter
1 package mini marshmallows
(one) 12-ounce box rice Chex
1 9-ounce package Funfetti baking chips (Pillsbury)
2 cups mini chocolate eggs (Cadbury)
Rainbow sprinkles
Instructions:
Place the butter in a large stock pot and cook over medium low heat.
When the butter is melted, add the marshmallows and stir to combine.
Allow the marshmallows to melt, then stir in the Funfetti chips.
Remove the pan from heat and carefully stir in the Chex, making sure all the cereal pieces are fully coated.
Transfer the mixture to a 9×13 baking dish and top with sprinkles and chocolate eggs.
Press the cereal mixture firmly into the pan, then allow it to cool completely, at least 1 hour.
Cut into 15 bars before serving.
How do you store leftover cereal bars?
Since these bars don’t have any milk products in them, you can keep them stored in an airtight container at room temperature.
If you want to keep them in the fridge or the freezer, you totally can. The coldness gives them a fun new texture that will be delicious.
Variations
Since this recipe is relatively easy to make, the variations that you can do are minimal. If you want to use different flavors of chocolate chips, that is always an option. You can also add in fun sprinkles of different colors, too.
