Apple Pie Cheesecake Bars
Fall is right around the corner and although I LOVE summer there’s somethings special about fall and all the delicious treats it brings. One of my favorite things to do with the kids during Autumn is going apple picking. Growing up in Miami that just wasn’t an option but having lived in areas where Apple trees are a thing most of my adult life I truly appreciate the beauty of it.
So naturally making apple themed recipes is a must in my home once fall hits. That’s why I thought it was only fitting to make this delicious recipe that combines all of my favorite flavors, apples and cheesecake. I decided to make a simpler hybrid of my Caramel Pecan Apple Pie cheesecake into a simpler dessert bar recipe.
These bars will be a huge hit wherever you take them and they’re incredibly simple to make. I opted out of using a homemade apple pie filling with store bought one but you can definitely make your own to take these to another level.
These are the perfect dessert to accompany my Carne Con Papas (Traditional Cuban beef stew) bisquick zucchini pie, or Indian-spiced chicken nuggets
What you need to make Apple Pie Cheesecake Bars
1 ½ cup flour
¾ cup brown sugar, divided
8 ounces cream cheese, softened
¾ cup butter, softened
¼ cup old fashioned oats
¼ cup sugar
1 egg
½ teaspoon vanilla extract
1 can apple pie filling
¼ cup caramel sauce
How to make Apple Pie Cheesecake Bars
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- Whisk together the flour and ½ cup brown sugar.
- Add the butter and use a fork or pastry blender to cut in the butter until the dough begins to stick together.
- Pour 2/3 of the flour mixture into the prepared pan and press it until a solid crust.
- Bake in the preheated oven for 15 minutes.
- Add the oats and remaining sugar to the rest of the crust mixture. Stir to mix and set aside.
- When the crust is just beginning to brown, remove it from the oven and allow it to cool for five minutes.
- While the crust is cooling, prepare the cheesecake layer by beating together the cream cheese and sugar.
- Add the egg and vanilla and beat until smooth.
- Pour the cheesecake mixture over the crust.
- Top the cheesecake with the apple pie filling.
- Note: I cut the apples into smaller pieces, but you don’t have to do this.
- Sprinkle the remaining crust mixture over the top of the apples to make a streusel topping.
- Return the pan to the oven to bake for 30 minutes, until the streusel topping is golden brown.
- Allow the bars to cool in the pan until the pan is safe to touch, then transfer to the refrigerator to chill for at least one hour.
- When ready to serve, cut into 9 bars and drizzle with caramel sauce.
