    Vegetarian Cuban Picadillo

    Lent can be a difficult dietary time for me and my family. Because many of our favorite meals include meat. Especially those Latin meals my kids love. So when Lent comes around it can get a bit tricky making some of our favorites because well, the main ingredient is meat. Thankfully, MorningStar Farms® gives my family the opportunity to try out some delicious favorites we love without the meat. Allowing us to stay in line with our religious observance, while still creating delicious and nutritious meals that can be easily made for our busy family.So check out the delicious Vegetarian Cuban Picadillo that joins the delicious flavors we love without the meat.

    Making the Vegetarian Cuban Picadillo couldn’t be easier. Check out how easy it is with my recipe below.

    Every Cuban has a special way of making Picadillo but the one item that makes it picadillo is well the meat. However, it’s so neat to be able to use the MorningStar Meal Starters Grillers Crumbles to give this dish the “meat of the dish” 100% Vegetarian (Although you would never guess) you will be able to keep this meal Vegetarian as can be.morning star 2


    1 Table spoon of olive oil

    1 Medium onion Chopped

    1 Large green Pepper Chopped

    3 Garlic Cloves peeled and minced

    Bag of MorningStar Meal Starters Grillers Crumbles

    1/2 Cup of Tomato Sauce

    1/2 Cup of Sliced, stuffed Green Olives

    1 Table spoon of Capers

    1 6oz drained jar of Pimientos

    1 teaspoon of Pepper

    1 teaspoon of Salt

    optional: 1/4 cup of raisins ( I omit this because my kids don’t like it with raisins)
    Heat the oil in a large skillet and saute the onions, peppers and garlic until the onions are translucent.
    Add the MorningStar Crumbles and mix with onion mixture.
    Stir in the Tomato Sauce, olives,capers,vinegar, salt and pepper

    Reduce heat to low and cook until it “thickens up” for around 20 minutes.
    Serve over White Rice and enjoy! Buen Provecho!
